AT LAST THE TRUFFLES ARE ARRIVING!
Some delays have been experienced due to the late start to the season – it was still very warm in May and then last week the volcanic ash from Chile closed airports from Perth to Hobart.
However, the ground is now getting plenty of frost at night and it should be a great season for the wonderful Perigord Truffle. There is already great demand after some excellent articles appeared in national and international press, we loved this story appearing a couple of weeks ago in the SMH and how one of their dogs has gone from being a $10 rescue pup to being worth over $1million...
Initially we’ll be getting smaller truffles ( which is ideal for most home cooks) weighing around 25-40gms and this will increase as the 3 month season progresses.
The truffles need to be ordered by Monday lunch time to ensure delivery by the weekend, they are harvested with the assistance of Bella and Sunny on Tuesday/Wednesday and shipped to arrive in store on Thursday/Friday. We then pack your order into sealed containers with 4 fresh eggs so you have wonderful infused truffled eggs ready for brunch – yummy!
We will stock some spare truffles but due to the short shelf life – we’d recommend using with 7-10 days – stock is very limited.
To help launch the start of the season we are having a truffle tasting morning next Saturday from 10.00 and we will be making truffle and potato pizza and a simple pasta with truffle dish – both dishes will showcase why truffles are such a sought after ingredient.
Also available, at Chef and the Cook are truffle salt, truffle honey and hazelnuts in truffle honey.
